(Our farmers are ecstatic)…. but the cost of cherries has soared! This is a rather long letter of explanation, but it will help you view our situation more clearly while offering some alternative relief. CAPULIN is being forced to increase prices on our coffee, beginning Tuesday the 15th of February 2011. Our costs of cherries has hit a record $18.00 pesos a kilo… ($9.00 to $10.00
pesos a kilo last season) A dramatic increase! It takes 6-7 kilos of cherries to make one kilo of Green Bean CAPULIN, and then 5 kilos of Green Bean to make 3.5 to 4 kilos of roasted CAPULIN, depending on the roast profile. The result of which is that we have raised our prices at $1.00 per pound, (and please note) our increased costs are still far higher than the price increase, but we are attempting to distribute the cost increase between us.

compensate…. plus shipping…. We hate to do this but we have NO CHOICE and no reserve to fall back on to
defer the increase…. we are asking everyone to share the cost of helping keep
the CAPULIN EFFORT alive, even if you need to look upon the increase as a
contribution to the real costs of equitable and ethical business, which is what
it takes in order to address the people’s poverty and save the forests and the
birds by dry processing, 100% fully mature coffee cherries, by hand. We are
determined to do it right and your support is what it takes. The why is really hard to say unless you believe in worldwide manipulation? Originally we heard that Brazil had a bad year, and then we read they had a record production year? Whatever the reason, our unique situation multiplies the complexities. Our problem… briefly… Producing 100% fully mature, traditionally sun dried, hand processed coffee is an enormous amount of work, and a very high risk endeavor… picking 100% fully mature cherries or hand sorting the cream out, is not in the mind set of Mexican producers… Mexico has one of the lowest maturity standard requirements in the industry. (They allow a lot of immature cherries!) They also receive more money per pound because ~the ‘US dollar influence’~ here, more so than, the further from here that you get. Additionally we are our own worst enemy, from a certain point of view, as we force the washed coffee buyers to pay more to get coffee in our villages, which forces us to pay more, (twice as much) because we guarantee our farmers receive double what the water processors pay. So we end up shooting ourselves in the foot in order to accomplish the impossible. We can not compete with the big water processed producers paying up front, the farmers get less, but they get the $ right in the hand instead of the 50% down and monthly installments as you, our customers buy it. They just opt out if we don’t make it worth their while to do it the harder, labor intensive, ‘right way’…. bottom line, ‘the rightness’ of it is not why they sell us cherries, most are like everyone else, they follow the money. CAPULIN has established a policy that is truly; Fair to the Farmers, Fair to the Producers, Fair to the men and women who labor for You, Fair to the Environment, Fair to our Consumers and Fair to the quality of the Medicine available in the Coffee’s Seeds. It is the only way to provide the highest quality coffee available, anywhere, at any price. If CAPULIN does not maintain this standard: 1.
