‘light’ the enormous social and environmental
problems created by the low labor technology
of water-processed coffees.
Regardless whether or not a coffee is;
Certified Organic, Shade Grown or 'Fair Trade',
if it was processed in water,
'We the people Lost'
The real cost of producing a quality product for the
consumer, one which preserves the environment and
feeds people, (thus the real cost of CAPULIN) is obscured
by the mass media propaganda of the unconcerned corporations
declaring that the price the consumer is currently paying
for their washed coffee products, is 'FAIR'.
IT IS NOT FAIR!
It is not fair to the villagers,
not fair to the environment
and not fair to the consumer.
The real and important issues for the
conscious consumer go virtually un-addressed,
if not disguised, by the washed coffee industry.
The loss of consumer quality, the environmental
destruction, the removal of vital labor incomes of
the villagers and the associated social disruption
with which the people are forced to contend,
is not being considered! This is not good.
Un-addressed is this mass migration of the labor
force, all leaving their villages in search of work in
order to send food money back to their Families.
Can you imagine the wrenching apart of families
because one must make the perilous journey to
'El Norte'. Leaving behind their homes, their
partners, their babies, their friends and their
customs, just so you can drink a cheap cup of
environmentally inappropriate coffee?
Are you real, true green?
Do you believe it is any of these people's desires
to cut their trees or leave their Jungle paradises
to become some Gringo's immigrant laborer?
Come On Brothers and Sisters!
Washed coffee creates an incredible barrier
to social equity, environmental sanity and
a good, old fashioned, cup of coffee!
This presentation is our way of sharing views of
the non-beneficial effects of floating, fermenting
and furnace-drying your coffee, (without your
knowledge or understanding of the effects), prior
to arriving in your cup, prior to sales to your
favorite socially conscious roaster and prior
to roasting in their chosen method.
CAPULIN hopes to provide an insight into, how
and why, the people upon whose lands the RICHEST
agricultural crop in the world is produced, are
amongst the POOREST people in the world and
exactly how, 'we the consumers', might exercise
control over the resulting poverty and devastation.
This is the conscious consumer's finest opportunity
to participate in the introduction of a peaceful social
structure where the criteria of business, and life, is
based upon consumer quality, economic equity,
environmental protection and human compassion.
The commonly accepted water processing
method is socially disruptive, environmentally
destructive and diminishes the virtues of natural,
sweet, flavorful, and stimulating coffee.
Keep In Mind!
This is all done solely for the ‘profit lines’ of
the unconcerned multi nationals in control of
the industry, who employ village water supplies,
instead of village people for processing.
We believe the uninformed or misinformed
consumers who are paying the tab, both
figuratively and literally, deserve to know
that there is a way to help bring about
a little peaceful balancing and equity in the
exchange process allowing a benefit to the
environment, to the small farmers and our coffee.
We are just talking about a method of processing
which allows all the qualities, of each individual
coffee region to be available to the consumer.
Even if you didn't really give a damn about the
plight of the villagers, capturing a coffee cherry
at the height of its perfection, carefully sun
drying the sugars into the seed, has got to create
the best specimen of that particular coffee's potential.
Additionally, natural processing creates all the equity and
environmental considerations on its own, and allows the labor
to go back into the villagers and the quality into the coffee.
What if all the good folks simply stopped voting for a
destructive process with their consumer dollars?
We Must Realize!
If we can direct a little of the cash flow back
into the hands of the people, it is not as likely that
they leave their homes or cut their trees or sell their
land. Maybe the birds would replenish themselves?
What if the people have your money?
This is where our dollars really count.
CAPULIN doesn't want to sell the whole
world 'natural' coffee, but we want the
whole world to buy natural coffee.
